1 small butternut squash ( 1-1/2 pounds)
3/4 c. cooked long grain and wild rice
1/3 c. ricotta cheese ( i used low fat)
3 Tablespoons dried cranberries
3 Tablespoons mango chutney
1 green onion, chopped
3/4 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons butter
Cut squash in half lengthwise; discard seeds. Cut a thin slice from the bottom of each half so it sits flat. Place pulp side down in an 11-in. X 7-in. X 2-in. Bake, uncovered, at 350 degrees for 30 minutes.
Drain water from pan; turn squash cut side up. When cool enough to handle, scoop out pulp, leaving about a 1/4-in. shell.
In a large bowl, combine the pulp, rice, ricotta cheese cranberries, chutney, onion, curry powder, salt and pepper. spoon into squash shells. Dot with butter. Bake for 15-20 minutes or until squash is tender. YEILD: 2 servings.
I am giving Shelfari and test ride this week to see if it does anything useful. So far, neat widget in the sidebar of the blog. There is a surprising number of people already on board, you can check their libraries as you browse around.
The interface is decent and responsive, might as well take a spin. You can sign up yourself rightHere.
Personally, I am just adding books as I read them rather then back filling them all. So, go ahead and read along with me.
James Kunstler on the (un)sustainability of Suburbia.
He talks a lot about buildings defining the public space and how the post-war (WWII) development didn’t adher to the philosophy of livable communities.
18 minutes, give or take, worth a listen.
A (too?) long video of my cousin’s paying hommage to the last great great rock band.
This is all shot at Mistie’s Club…which is in the lobby of the Clarion Hotel in Yakima, Wa.
Now, please note, aside from 15 or so of us, the rest of the people at this place weren’t guests. This is just the best that Yakima has to offer on a Saturday night.
Please note, this is not a Karaoke song, there are no lyrics…Jesse was just making this moment happen through sheer force of will (and awesomeness).
Best part, note the dance stylings of Rob (weird looking dude in purple tank top. Not related) and Striped Shirt McHead Bang. They came into my life, only to brighten it for a minute, before mysteriously wandering out the door.
By the by, that’s my cousin Jesse doing the lead vocals.
Update: Back Up Vocals by Diane, Courtney, Grant, maybe more…I haven’t even watch this dang thing all the way through.
The sleeper flick Eagle vs Shark showed the painfully awkward romance of two New Zealanders. Now, aside from the fact that New Zealand is a land of magic and enchant, I have no personal reason to steal their stuff. Up until now, I thought that was mutual.
BEHOLD!
It looks like besides stealing the Australian accent, they ripped off my halloween costume from 20 years ago. Please note, my Mom made that thing by hand in an attempt to satiate my love of sharks. There was no factory line of shark based clothes for kids. This clearly indicates that, yes, The New Zealand Film Commission ripped off my shark costume.
Note: I will refrain from mentioning the obvious use of my awkward romance ability (which they also stole) throughout the movie.
Thanks New Zealand, ya jerks!
Note: This is part one of a series where I illustrate the many infringements the world has made on my personal creations, ideas, and “looks”. Stay tuned for more.
