Tofu with Black Beans and Garlic

So, here goes the normalcy for Ryan and Me.  Tonight we make tofu at home for the first time ever, and to our delight, we didn’t create a disaster!  The over all effect of this dish is surprisingly asian inspired, with the hoisin sauce and ginger.  We served this on a heaping bed of spinach and devoured every bite.

Tofu with Black Beans and Garlic

  • 1 tsp. sesame oil
  • 1 14-ounce can black beans, rinsed and drained
  • 1 tbs. minced fresh garlic
  • 1/3 cup sliced extra-firm tofu
  • 2 tsp. grated fresh ginger
  • 3 tbs. hoisin sauce
  1. Heat oil in a nonstick skillet.
  2. Add beans and garlic; stir fry for 2 minutes.
  3. Add tofu and ginger; cook stirring frequently, 2 minutes.
  4. Stir in hoisin sauce.
  5. Serve over brown rice or spinach.

    Well, I’ve made this twice and here’s my recommendations:

    Double the amount of sesame oil.

    Use more than the “suggested” amounts of garlic and ginger (at least by 50%).

    Stir fry the tofu with the oil and garlic and near the end toss in the ginger too.

    Thoroughly rinse the black beans to get all of the gunk off of the beans. If you are into washing your vegetables, be sure to use black bean flavored soap.

    Eat spinich and die!

    Consider dropping in a tsp of soy sauce, though I’ve not tried that yet…you’re on your own!
